This gassho-style building, relocated from Itoigawa City in Niigata Prefecture, envelops you in the crisp air of Norikura Highlands while you encounter the fragrant aroma of freshly made soba.We carefully select the finest buckwheat flour for each season, using locally grown "Bansho Soba" cultivated at elevations of 1,200 to 1,500 meters in the Norikura region, alongside nationally renowned Nagawa-grown buckwheat and buckwheat flour from the foot of Mount Yatsugatake. Each is meticulously stone-ground.The soba, kneaded with spring water flowing from the mountain foothills, embodies the sincere dedication of our craftsmen.
