The traditional "miso ball method," where boiled soybeans are shaped into balls and left to rest, is more labor-intensive than modern methods. This extra effort results in a rich flavor where the soybean's umami undergoes double fermentation. You can sample the miso in-store, so be sure to taste its deep, complex flavor for yourself.The grounds also preserve the remains of Matsumoto Castle's "Sute-bori earthen rampart," offering not just culinary delights but also rich historical heritage.
