Man'nenya Main Store

Founded in 1832. Miso ball making for 1,300 years.

Just a 5-minute walk from Matsumoto Castle, this long-established shop, operating since 1832, still breathes life into Japan's oldest miso-making method. The traditional "miso ball method," where boiled soybeans are shaped into balls and left to rest, is more labor-intensive than modern methods. This extra effort results in a rich flavor where the soybean's umami undergoes double fermentation. You can sample the miso in-store, so be sure to taste its deep, complex flavor for yourself. The grounds also preserve the remains of Matsumoto Castle's "Sute-bori earthen rampart," offering not just culinary delights but also rich historical heritage. It's a rare spot where you can experience the history of the castle town with all five senses.
