Soba Restaurant Kitamon stands within the former castle grounds of Matsumoto Castle, a National Treasure. The restaurant name derives from the sturdy Kitamon gate, built in the yagura-zukuri style up until the late Edo period. Its calm interior features a sukiya-zukuri design crafted from hinoki cypress wood. Using specially blended and adjusted domestic whole buckwheat grains, carefully selected and stone-ground, the restaurant is known for its thin, slightly white soba noodles.The Kitamon Great Well,
